
RACLETTE
All our raclettes are made from whole (no skimmed) raw milk, identical to that produced by our farmers. Then come all the stages of making the uncooked pressed cheese to create high-quality cheeses.
NATURAL: This cheese, with a unique recipe, will be the basis of our entire range. A raw milk raclette that benefits from the expertise of our cheesemakers. This meticulous production process is combined with cellar maturation to achieve a smooth, supple crust.
It is also thanks to time and its minimum 56 days of maturing on a board that our raclette will be able to offer you all its characteristic taste, texture, and flavors.
SMOKED: A 100% regional and authentic raclette. It is smoked in our own smokehouse at the cheese dairy.
WILD GARLIC: All the qualities of our raclette with wild garlic and its characteristic garlic notes. It’s a harmonious flavor that respects the cheese’s original qualities.
PEPPER: The perfect balance between the sweetness of raclette and the intense flavor of pepper.
But also CHILLI, MUSTARD, and WHITE WINE (the latter flavoring is added during the ripening process).
We have also developed a raclette flavored with 2% Tuber Aestivum truffle: Truffignon.

WURTEMBERG: This cheese is a semi-cooked pressed cheese with a mixed rind made from cow’s milk. Beneath the ridged rind lies an ivory-colored paste. Its texture is soft, creamy, and even, with a few holes. On the palate, the flavor is bold, fruity, and persistent.
