BRILLAT-SAVARIN

Brillat-Savarin is our core product. This cream-enriched cheese has a rich and varied history. Indeed, it was to pay tribute to Jean-Anthelme Brillat-Savarin (1755-1826), a renowned figure of the Revolution and, above all, a fine gourmet, that Henri Androuet had the idea of ​​naming a cheese after him around 1930.

It is a soft cheese made from lactic curds, previously enriched with cream before maturation. It can be eaten fresh; its sweetness and creaminess will dominate, with notes of cream and a hint of fresh acidity.

As it ages, its lovely bloomy rind appears after a few days and gives it a more pronounced character. But once again, it is the creaminess and suppleness of the cheese that define its characteristics. The existing creamy flavor is complemented by nuances of hazelnut and mushroom from the rind, giving it its aromatic complexity.

Brillat-Savarin has been a PGI (Protected Geographical Indication) since 2017, and its production area extends from the south of the Île-de-France region to Burgundy.

Our Brillat-Savarin cheeses are available in different weights (100 grams, 200 grams, and 500 grams) with packaging suitable for all consumption methods. Presented in a maturing bell or in a wooden box.
